Ingredients:
8 ounces (225g) of spaghetti
2 medium zucchini
3 tablespoons of olive oil
2 cloves of garlic, minced
1/4 teaspoon of red pepper flakes (optional)
Salt and pepper to taste
Grated Parmesan cheese (optional)
Fresh basil leaves, chopped (for garnish)
Instructions:
Cook the spaghetti according to the instructions on the package until it's cooked but still a little firm. Drain the spaghetti and set it aside.
While the spaghetti is cooking, prepare the zucchini. Cut off the ends and slice them into thin circles.
Heat 2 tablespoons of olive oil in a large pan on medium-high heat. Add the zucchini slices and cook them for about 4-5 minutes, or until they turn golden brown and crispy. Stir the zucchini occasionally to make sure they cook evenly. Take the zucchini out of the pan and set them aside.
In the same pan, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute, or until the garlic smells good.
Put the cooked spaghetti back into the pan with the garlic mixture. Mix everything well so the spaghetti gets coated with the flavors. Add salt and pepper to your taste.
Add the crispy zucchini back to the pan with the spaghetti and gently mix everything together.
Take the pan off the heat and transfer the spaghetti and zucchini to serving plates. Sprinkle grated Parmesan cheese on top if you like, and garnish with fresh basil leaves.
Serve the spaghetti with crispy zucchini while it's still hot.
