Cheese pasta is a delicious and comforting dish that combines pasta with a creamy cheese sauce. Here's a simple recipe for cheese pasta:

Ingredients:

  • 8 ounces (225g) of pasta (such as macaroni, penne, or fusilli)

  • 2 tablespoons of butter

  • 2 tablespoons of all-purpose flour

  • 2 cups (480ml) of milk

  • 2 cups (200g) of shredded cheese (such as cheddar, mozzarella, or a combination)

  • Salt and pepper to taste

  • Optional toppings: grated Parmesan cheese, chopped fresh herbs (such as parsley or basil)


Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 1-2 minutes until the mixture becomes smooth and bubbly.

  3. Slowly pour in the milk, whisking constantly to prevent lumps from forming. Continue cooking and stirring until the sauce thickens and comes to a simmer. This usually takes about 5-7 minutes.

  4. Reduce the heat to low. Add the shredded cheese to the sauce, a handful at a time, stirring until each batch is completely melted before adding more. This will help ensure a smooth and creamy sauce.

  5. Once all the cheese has melted and the sauce is smooth, season with salt and pepper to taste. Remember that the cheese will add some saltiness, so be cautious with the salt.

  6. Add the cooked pasta to the cheese sauce and toss until the pasta is evenly coated.

  7. Serve the cheese pasta immediately, garnished with grated Parmesan cheese and chopped fresh herbs if desired.
