Blueberry ice cream

Blueberry ice cream is a delicious frozen dessert made with the flavor and essence of blueberries. It typically consists of a creamy base mixed with blueberry puree or syrup, resulting in a refreshing and fruity treat. Blueberry ice cream can be enjoyed on its own, in a cone, or as a topping for other desserts like waffles, pancakes, or pies. Some variations may include additional ingredients like fresh blueberries, chocolate chips, or nuts to enhance the flavor and texture. It's a popular choice for ice cream lovers who enjoy the natural sweetness and vibrant color of blueberries.

Ingredients:

  • 2 cups fresh or frozen blueberries

  • 1 cup granulated sugar

  • 2 cups heavy cream

  • 1 cup whole milk

  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, combine the blueberries and sugar. Cook over medium heat, stirring occasionally, until the blueberries release their juices and the sugar has dissolved, about 5-7 minutes. Remove from heat and let it cool slightly.

  2. Transfer the blueberry mixture to a blender or food processor and blend until smooth. If you prefer a chunkier texture, you can reserve some of the cooked blueberries and add them back into the mixture later.

  3. In a separate mixing bowl, whisk together the heavy cream, whole milk, and vanilla extract until well combined. Add the blueberry puree to the cream mixture and stir until evenly incorporated.

  4. Cover the mixture and refrigerate for at least 2 hours or until chilled.

  5. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-30 minutes until the ice cream reaches a soft-serve consistency.

  6. Transfer the churned ice cream to a lidded container, and if desired, fold in any reserved cooked blueberries for added texture. Place in the freezer and let it firm up for at least 4 hours or until it reaches the desired consistency.

  7. Serve the blueberry ice cream in bowls, cones, or alongside your favorite desserts. Enjoy!

Note: If you don't have an ice cream maker, you can pour the mixture into a shallow dish and freeze it. Every 30 minutes, take it out and stir vigorously to break up any ice crystals until it reaches the desired consistency. Repeat this process 3-4 times.
