Whole-Grain Pancakes




Ingredients:

  • 1 cup whole-wheat flour

  • 1/2 cup all-purpose flour

  • 2 tablespoons sugar (or your preferred sweetener)

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup milk (dairy or plant-based)

  • 1/2 cup plain Greek yogurt

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • Cooking spray or butter for greasing the pan

Instructions:

  1. In a large mixing bowl, whisk together the whole-wheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the milk, Greek yogurt, eggs, and vanilla extract until well combined.

  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Let the batter rest for about 5 minutes.

  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or a small amount of butter.

  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, which should take about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.

  6. Remove the cooked pancakes from the skillet and keep them warm. Repeat the process with the remaining batter, greasing the pan as needed.

  7. Serve the whole-grain pancakes warm with your choice of toppings, such as fresh fruit, a drizzle of maple syrup, yogurt, or nut butter.
