Ingredients:

  • 1 medium-sized pumpkin (around 3-4 pounds)

  • 1 cup coconut milk (or heavy cream)

  • 2 tablespoons olive oil

Instructions:

  1. Start by preparing the pumpkin. Cut it in half, remove the seeds and stringy bits, and peel off the skin. Then, cut the pumpkin into small cubes.

  2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.

  3. Add the cubed pumpkin to the pot and sauté for a few minutes to lightly cook the pumpkin.

  4. Pour in the vegetable or chicken broth, ensuring that the pumpkin is submerged. Bring the mixture to a boil.

  5. Once boiling, reduce the heat to low and let it simmer for about 20-25 minutes or until the pumpkin becomes tender and easily mashable.

  6. Remove the pot from the heat and allow the mixture to cool slightly. Use an immersion blender or transfer the soup to a blender in batches, and blend until smooth and creamy.

  7. Return the blended soup to the pot and place it back on the stove over low heat. Stir in the coconut milk (or heavy cream) and let the soup warm through without boiling for a few minutes. Season with salt and pepper to taste.

  8. Once the soup is heated, it's ready to be served. Ladle it into bowls and garnish with fresh parsley or chives for added flavor and presentation.
