Ingredients:

  • 1 medium-sized butternut squash

  • 1 onion, chopped

  • 2 cloves of garlic, minced

  • 4 cups vegetable or chicken broth

  • 2 tablespoons butter or olive oil

  • Salt and pepper to taste

Instructions:

  1. Peel the butternut squash, remove the seeds, and cut it into chunks.
