Pancakes with fruit are a delicious and popular breakfast or brunch option. They combine the fluffy texture of pancakes with the freshness and sweetness of various fruits. Here's a basic recipe for pancakes with fruit


Ingredients:

  • 1 cup all-purpose flour

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 large egg

  • 2 tablespoons melted butter

  • 1 teaspoon vanilla extract

  • Assorted fruits (such as sliced bananas, berries, or chopped apples)

  • Maple syrup or honey for serving

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

  4. Preheat a non-stick skillet or griddle over medium heat.

  5. Grease the skillet lightly with butter or cooking spray.

  6. Pour about 1/4 cup of batter onto the skillet for each pancake.

  7. Add a few pieces of your chosen fruits onto the batter of each pancake.

  8. Cook until bubbles form on the surface of the pancake and the edges start to look set, approximately 2-3 minutes.

  9. Flip the pancake and cook for another 1-2 minutes, until golden brown.

  10. Repeat the process with the remaining batter and fruits.

  11. Serve the pancakes with additional fruit slices on top and drizzle with maple syrup or honey.
