Ingredients:
1 cup almond butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the almond butter, brown sugar, and granulated sugar. Mix well until the ingredients are fully incorporated.
Add the egg and vanilla extract to the almond butter mixture. Stir until smooth and creamy.
Add the baking soda and salt to the bowl and mix until everything is well combined.
Fold in the chocolate chips, making sure they are evenly distributed throughout the dough.
Scoop about 1 tablespoon of dough for each cookie and place them onto the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each cookie with the back of a spoon or the palm of your hand.
Bake in the preheated oven for 8-10 minutes, or until the edges are slightly golden.
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
