Blueberry cheesecake is a delightful dessert that combines the creaminess of cheesecake with the sweetness and tanginess of blueberries. Here's a recipe to help you make a delicious blueberry cheesecake.
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
½ cup melted butter
For the cheesecake layer:
16 ounces (450g) cream cheese, softened
½ cup granulated sugar
2 eggs
1 teaspoon vanilla extract
For the blueberry topping:
1 ½ cups fresh or frozen blueberries
¼ cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
Instructions:
Preheat your oven to 350°F (175°C) and line a 9x9-inch (23x23cm) baking dish with parchment paper or grease it lightly.
In a bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture evenly into the bottom of the prepared baking dish to create the crust layer.
In a separate bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.
Pour the cream cheese mixture over the crust in the baking dish, spreading it out evenly.
In a small saucepan, combine the blueberries, sugar, cornstarch, and lemon juice for the topping. Cook over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens slightly.
Pour the blueberry topping over the cream cheese layer, spreading it out evenly.
Bake in the preheated oven for about 25-30 minutes or until the edges are set and the center is slightly jiggly.
Remove from the oven and let it cool completely in the baking dish. Once cooled, refrigerate for at least 2 hours or until chilled and firm.
Once fully chilled, remove the blueberry cheesecake bars from the baking dish and cut into squares.
Serve and enjoy!
These blueberry cheesecake bars are a simpler alternative to a traditional blueberry cheesecake, but they still offer a delicious and satisfying treat. They can be stored in the refrigerator for a few days. Enjoy!
